Deliciously moist orange cake

 

I've never been much of a baker, only usually savoury things get cooked in my oven, but lately I seem to have the urge to bake bread, muffins and cakes. There is just something so satisfying creating something delicious out of flour. I'm also relishing in the giving of these goods as I don't like them laying around my house too long as they end up in my tummy! Off they go to family, friends or the freezer for lunchbox treats or that last minute drop in from a friend for a cupa if its too early for wine and cheese.

I'm trying to use whats in season as its cheaper and has a better flavour and navel oranges are just the ticket.  I found this recipe here but there are hundreds of different takes on it if you google it.  The thing I liked about this recipe is it has few ingredients and there isn't any fluffing around-whiz, slap, dash, done!

Moist orange cake
1 whole orange, well washed
180g melted butter
3 eggs
1 cup sugar
1 1/2 cup s.r flour sifted or 1 1/2 cups plain flour with 1 1/2 tspns baking powder sifted

Preheat oven to 180c.
Grease and line whatever cake tin you have, I used a round spring form but you could use a square one or a round one that isn't springform. It could probably be done in muffin trays too. Will have to try that one. Chop washed orange and place in food processor and whiz until it is completely broken down with no large bits remaining.  Add the rest of the ingredients and whiz again until everything is mixed together. 





I used my hand electric beater in large bowl as my food processer is only small. Should only take 30 seconds.  Use a spatula to scrap it all into the cake tin. 



Cook for approx 35-40 mins.  Allow to cool slightly in cake tin and then place on a wire rack.  You could ice this with icinig sugar and water mix or cream cheese icing but I'm leaving it in its pure form.
