killer lamb kofta


Tried out a new addition to our menu on the weekend, lamb koftas, and they will be a firm favourite from now on!! I didn't have the time but will be making homemade tortillas next time to go with them.

Lamb koftas
1 kg lamb mince
1 onion
1 carrot
1/2 a zucchini
small handful of mint and parsley
3 cloves of garlic
1 tspn each of paprika, ground cumin, ground ginger, ground coriander
10 wooden skewers

Soak skewers in water for a few minutes, it will stop them from burning.
Blitz up the onion, , garlic, herbs, carrot, zucchini in food processor. In a large bowl put all ingredients together and mix well so all is combined. 

You can add some cayenne pepper or chilli if you are so inclined too.  Take a handfull and shape the mince into a thick sausage and slide skewer through the centre.  Place on a baking tray when all are done and put in the fridge to firm up for half an hour or so.  You can do these on the bbq hotplate but I just did them in a hot oven, 200c, until golden, around 20 minutes.



We had them with hummus and a salad of rocket, coriander, corn off the cob, avocado, julienne carrot, lemon juice and evoo with a garlic pizza.






They hit the spot after a big day in the garden.
